Pommes de terre à la paysanne
Shopping list: 1 kg of potatoes, a pack of smoked bacon pieces, 2 onions, 1 tablespoon of strong French mustard, 15 cl of stock from half a cube, 10 cl of crème fraîche, 50 grams of grated cheese, 25 grams of butter and oil, salt and pepper, chopped parsley.
Method: slice the potatoes thinly and bring them to the boil, then drain them. Slice the onions and cook them in the oil until translucent, not brown! Butter a dish or pour some oil into it. Lay the potato slices like roof tiles on the bottom and sprinkle a little salt and pepper over them. Put half the onions and all the bacon pieces on top. Smear the bacon pieces with the mustard and cover them with the rest of the onions and then the potato slices. Sprinkle pepper and salt over it and pour the stock over the whole thing. Oven at 190 degrees and the dish in the oven for 30 minutes. Mix the crème fraîche with the cheese and pour it over the dish, after which it goes in the oven another 15 minutes. Decorate the dish with some parsley. This dish is very good on its own, but it also works as a replacement for the potatoes with the roti de la paysanne.
