It all started on a Friday evening: Pappa boess invited his children, and everyone was allowed to bring someone along.
This site is an idea of the kids of Boesschoten. They felt it was well about time that Daad put his recipes on a site.
After plenty of Friday evenings eating together, it occurred to them to go ahead and re-create the dishes, and they called Daad to ask how it was supposed to work again. In the end it turned out that a site was a lot easier. A lasting memory of many beautiful moments together…
After his retirement, Pappaboess left for France and took various internships with his friend Gilles Desert at the restaurant du Commerce in Saint Pourcain. Later internships with the chef, and more and more recipes came along…
No fast food, but slow food, pure ingredients that often need a long and gentle preparation. So much learned from Gilles Desert, the cook of “Le Commerce” in Saint Pourcain, by now a good friend for 40 years. Some of the recipes are even from the traditions of Oma boess.
