Penna with chicken and broccoli
Shopping list for 4 people: half a pack of penna, 2 chicken fillets, fresh stems of broccoli, 1 onion, olive oil, a small pack of cream, an apple, flour, curry powder, sherry, a stock cube, pepper and salt, grated Parmesan cheese.
Boil the penna 2 minutes less than indicated. Boil the broccoli over with salted water and drain it immediately. Cut the chicken into small dice, season with pepper, salt, curry powder and fry it in olive oil with the onion. Make the curry sauce: melt butter in the pan and add a tablespoon of flour, then, while stirring continuously, bit by bit add water until it is “yoghurt thick”. Add a stock cube, a splash of sherry, the finely sliced apple and some cream and then warm it through for a moment. In a large baking dish make layers just like a lasagna with the penna, the chicken and the broccoli and the sauce. 20 minutes in the oven at 200 degrees. Before serving, sprinkle grated cheese over it.
